Preparation:
Now that you're ready to get started you should examine the fish that you bought and look for a few tips on freshness before you start cooking it. Your fish should have clear eyes, shiny flakes and should only smell of salt water. If the fish has a ammonia smell you should not even bother to cook it because the ammonia smell is a sign that the fish isn't fresh and can make you very sick. You should also make sure that the meat is hard and the can't touch the head because this is another sure fire sign of freshness.
Cooking:
There are many different ways to cook fish. You can bake, smoke, sauté & fry, grill, broil & poach.
In this article we will cover baking fish because almost everyone has a conventional oven in their home or apartment and shouldn't have any problems baking it.
You can either bake the whole fish or bake fish fillets. It's up to you. For this article we will assume that you want to bake fish fillets.
Here's the ingredients you will need:
2 pounds of fillets
1 package of ripe cherry tomatoes
½ cup of pitted black olives (this ingredient is optional)
Two small cloves of garlic
Three green onions (finely chopped)
One third pound feta cheese (can be subsisted with mozzarella or parmesan cheese)
Light Mayonnaise (enough to coat the fish)
Directions:
Pre-heat your oven to 350°F
Cover the fish fillets with may mayonnaise and then place them in your baking dish.
Cook the fish for ten to fifteen minutes.
While you're cooking the fish you should sauté the onions and as soon as the onions are soft add the garlic and tomatoes. If the mixture is cooked the tomatoes will have collapsed.
Next step is to check the fish by inserting a fork into the flesh and twisting gently. If they flake and come apart easily then they are done. The general rule is to cook fish 10 minutes per inch of thickness. Always remember to not overcook because the fish will lose it's flavor and the meal will be ruined if you overcook it.
One the fish looks about done you should add the feta cheese (or your substitute of choice) to the top of the fish and place the fish back in the oven. Once the cheese softens or melts on the fish you should remove it from the oven and top with the tomatoes/olive mix.
Serve the fish with a nice green salad and enjoy!
