4 tips how I cook lobster tail delicious on the Grill ??



Yummmmyy, Lobster. Double Yummmmmyy, grilled Lobster Tail. Four easy steps to cooking great lobster on the grill :

   1. One of the hardest things about grilling lobster tail, is getting good quality, fresh lobster. I lived on the coast of New England for twenty-five years, and getting good quality lobster there was not very difficult. Recently, I have moved to the land locked MidWest, and it has become slightly more difficult to come by good tail here. There are a few methods that can be used to get good quality lobster tails here in St. Louis. First, I could travel to Maine by plane, train or automobile and buy the lobsters directly from Cap'n Krunch as they are brought off the boat. That would be the best quality and freshness, but probably not the easiest approach. Second, I could order them for overnight delivery from an internet lobster company. They would arrive nice and fresh, next day delivery, in a nice styrofoam cooler. Third, I could buy them from the grocery store, in the seafood department. Not so fresh here in the midwest. Anyway, procure some lobster tails using the preferred method, and move on to step 2.


   2. Using a chefs knife, leaving the fin part of the tail intact, cut the tail long-ways through the underside shell, the lobster meat, and the outer top shell. Loosen the meat from the shell, but leave attached. Rinse the meat and shell in cool water and pat dry. Rub the lobster meat with a mixture of olive oil and minced or crushed garlic. the lobster tail is now ready to be cooked.

   3. To keep the meat nice and moist, use a two step cooking approach. First, place the meat and shell onto a hot grill and sear in the taste. Cook the lobster until it is partially done, the meat is just starting to firm up and turn from pinkish to opaque white. Second, remove the tails from the grill and finish cooking in a hot saute pan by basting with a hot butter garlic sauce mixture, spooning the sizzling sauce over the lobster meat. The lobster tails will be cooked through when the meat appears firm and white, and not pink.

   4. Serve the lobster tails with whatever side dishes you'd like to have. Grilled or boiled corn is a good choice, boiled or grilled potatoes is a nice choice, whatever strikes your fancy. Garnish with chopped fresh parsley if available or whatever chopped fresh herbs you have access to.
